- 1 Teaspoon Papa Vince Balsamic Wine Vinegar
- 1 cup halved cherry tomatoes
- 1/2 cucumber, seeded and chopped
- 1/2 cup thinly slice roasted red peppers
- 1/4 cup olives
- 2 tablespoon red onion, thinly sliced
- 1 tablespoon fresh parsley
- 1/2 avocado, chopped
- 1 cup chikpeas
- 1/4 teaspoon garlic powder
- 1/4 cup chopped red bell pepper
Dressing Ingredients
- 1/2 avocado
- 1/4 vegan mayonnaise
- 1/4 teaspoon Papa Vince Sea Salt
- 1/4 teaspoon pepper
- 1/2 lemon juice
- 2 tablespoon fresh dill
- 1 tablespoon agave
- 1 tablespoon dijon mustard

In a bowl, mix all the ingredients; add the avocado; and ad the dill sauce
