Ingredients:
- 1 pack of Papa Vince Non-Enriched Whole Wheat Pasta
- 2 large carrots, diced
- 2 celery stalks, diced
- 1/4 cup of extra virgin olive oil (Papa Vince EVOO of course!)
- 1 jar of Papa Vince Tomato Sauce
- Papa Vince Trapani Sea Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Fresh basil leaves (optional)
Instructions:
1. Prepare the Soffrito:
- In a large skillet, heat the Papa Vince EVOO over medium heat.
- Add the diced carrots and celery. Sauté until tender and golden, about 10-12 minutes.
2. Cook the Pasta:
- While the veggies are frying, bring a large pot of salted water to a boil.
- Add the pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
3. Add the Tomato Sauce:
- Pour in the Papa Vince Tomato Sauce to the skillet with veggies.
- Stir to combine and let it simmer for another 5 minutes. Season with salt and pepper to taste.
4. Combine:
- Add the cooked pasta to the skillet. Toss to coat the pasta with the sauce and veggies.
5. Serve:
- Plate your delicious pasta and top with grated Parmesan cheese and fresh basil leaves if desired.

Carrots
