Romaine, Sweet Pepper and Walnut Salad

A simple salad that packs a punch of flavor and crunch, this dish makes the perfect
accompaniment to a company meal or weeknight family supper.

Salad Ingredients

  • 1 medium head romaine lettuce, torn into bite-sized pieces
  • 6 to 8 mini sweet peppers, seeded and thinly sliced
  • 1/3 cup chopped walnuts

Dressing Ingredients

How to make

  1. Put all of the salad ingredients into a large bowl. Put the dressing ingredients into a small bowl and whisk to emulsify. Pour the dressing over the salad. Toss and serve!

If desired, top the salad with shredded vegan parmesan cheese for extra pizzazz!
