Mediterranean / Vegan Diet
- 1 medium head romaine lettuce, torn into bite-sized pieces
- 6 to 8 mini sweet peppers, seeded and thinly sliced
- 1/3 cup chopped walnuts
- 2 tablespoons PAPA VINCE extra-virgin olive oil
- 2 tablespoons PAPA VINCE balsamic vinegar
- 1 tablespoon maple syrup
- 1 teaspoon Dijon or spicy brown mustard
How to make
- Put all of the salad ingredients into a large bowl. Put the dressing ingredients into a small bowl and whisk to emulsify. Pour the dressing over the salad. Toss and serve!

- Serves: 6 people
If desired, top the salad with shredded vegan parmesan cheese for extra pizzazz!
