Mixed Vegetables al Forno with Parsley Pesto

Oven roasted vegetables in Extra Virgin Olive Oil.  We used bell peppers, onions, potatoes & zucchini but you can add in any of your favorite vegetables.  We baste the vegetables in our parsley pesto, which can be made in advance so that you have it on hand.

Ingredients

    How to make 

    1. Clean and rinse the vegetables thoroughly and slice into small pieces.
    2. Mix Papa Vince Parsley Pesto* with Papa Vince Extra Virgin Olive Oil and stir until well mixed.
    3. Baste the vegetables with the mix.
    4. Place evenly in a pan and bake for 20-40 minutes until the potatoes are soft to eat.
    5. Buon Appetito!
