Ingredients
- 3 eggs
- 7 fresh artichokes
- 1 onion
- 2 lemons ( only needed to wash the artichokes )
- Papa Vince sea salt as needed
- Papa Vince extra virgin olive oil as needed
How to make Artichoke Omelette
- Remove the leaves of the artichokes.
- Stop once you arrive to the tender part.
- Cut the tender area and remove the choke.
- Cut outer edges that are hard.
- Cut in half and remove the hard purple area.
- Cut remainder and place in water bowl with lemons.
- Squeeze the lemons into the water.
- Do this with all of the artichokes.
- After the artichokes have been sitting, clean them.
- All lemon water needs to be removed.
- Place them to boil together with the lemons.
- While the artichokes are boiling, cut the onions.
- Add the onions to the artichokes on the stove and add Papa Vince Sea Salt.
- When the artichokes are ready put them in a colander and drain all the water.
- Remove the lemons and put the artichokes and onions back in the stove.
- Add Papa Vince Extra Virgin Olive Oil.
- Beat the eggs, add pepper and Papa Vince Sea Salt, and add the eggs onto the artichokes on the stove.
- Enjoy!

- Now, this could vary depending on how long it takes for your artichokes to be completely cooked. Remember, they are ready when you take a fork, and it is able to pierce though the artichoke!
