Not at all silly! I have to severely limit acidity in the food I eat. The tomato sauce is delicious; I add a pinch of baking soda to bring it to pH7 neutrality, and you cannot tell the difference. I also add a pinch of asafoetida (also called hing) which adds the flavor of garlic and onions without some of the difficulties that some folks have with those 2 allium bulbs. I assure you that the good ingredients are not marred by those 2 tiny additions, and I can enjoy a spicy meal of gnocchi alla marinara without tummy issues.
I have been using Papa Vince for many years. Love that it is single source from a small family farm. My favorite way to use it is to make salad dressing. I never buy store-bought salad dressings anymore. This olive oil makes the absolute best salad dressing you will ever taste. This family is passionate about their products. You can buy with confidence.

So good and a time saver when I’m too rushed to make my own. I made the mistake of refrigerating it, but this isn’t a grocery store salad dressing full of soybean oil and high fructose corn syrup. Just a handful of pure ingredients perfectly blended and balanced. I also use their olive oil and trust that it is not rancid - like so many others on the market.
