Why is this "Moscato" Vinegar?
We call it Moscato Vinegar because it is made with Moscato grapes (also Catarratto and Inzolia grapes)
What is the difference between regular vinegar and Papa Vince Vinegar?
The main difference between Regular Vinegar and Papa Vince Vinegar is the AGING. Let us explain.
Most vinegar producers ferment (don’t age) their vinegar in 3 days or less.
But how? They add yeast and sugar! This accelerates the fermentation and allows them to produce tons of vinegar!
At Papa Vince we age the vinegar for 8 YEARS! Yes, it takes time… And that's why we only produce 1000 lt of Moscato Vinegar per year!
Why do we age it for 8 years?
Because it contributes to the production of Organic Acids, it loads the vinegar with vitamins, minerals & antioxidants, and it also changes the vinegar’s taste: it changes it from acidic and bitter to a sweeter taste with a wonderful wine finish.

Is it ok to find a deposit in my vinegar?
A deposit found in the bottle is a natural occurrence of the product, and it does not alter quality.
What is the difference between Glaze Vinegar and Moscato Vinegar?
Glaze Vinegar is reduced Moscato Vinegar, with the addition of Royal Jelly. This thickens the Vinegar without adding sugar.

How is Papa Vince Vinegar made?
Papa Vince Vinegar is made with 3 grape types: Catarratto, Inzolia and Moscatello, and they’re all harvested in Sicily, Italy.
We cook our freshly harvested grapes to make fresh must and then mix with our fresh wine. The percentage of wine determines the thickness of the final product. We mix about 20% grape-must to 80% fresh wine. Then we add our 41-year old starter and age for 8 years in wood.
All natural, we don’t add sugar or yeast!

How is the balsamic glaze made? Does it have added sugar?
The only difference between our Balsamic Glaze and Moscato Vinegar is that Glaze is a vinegar reduction with the addition of Royal Jelly.
This allows us to thicken the consistency without adding sugar.
Does Papa Vince Vinegar contain sulfites?
We do not add sulfites. They are naturally occurring. We use Oak and Chestnut barrels, and they do not have a lead lining.
Aging
How long is the aging process?
It’s aged for 8 years in Oak & Chestnut casks. As the vinegar ages in the barrels, it acquires flavors from the wood, and its acidity mellows.
What casks are used for aging the vinegar?
It is aged in Oak & Chestnut casks.
How does aging change the vinegar's taste?
The aging changes the vinegar taste from acidic and bitter to a sweeter taste with a wonderful wine finish.

How does aging affect the vinegar's properties?
Due to its long fermentation (8 years) Papa Vince Vinegar is LOADED with vitamins, minerals & antioxidants.

Is this aged in heirloom casks? (they were lined with lead which is why balsamic vinegars can contain high levels)?
We do not use Heirloom casks. We use Oak and Chestnut barrels.

AGED 8 YEARS
Most vinegars in the market, including balsamics, are not aged. Enzymes and yeast are added to complete the fermentation process in 3 days. MASSIVE PRODUCTION
PAPA VINCE IS LIMITED PRODUCTION
We only produce about 1000 liters / year. This is an artisanal product.
PAPA VINCE IS LOADED WITH VITAMINS, MINERALS & ANTIOXIDANTS due to its long fermentation.
For instance:
- Organic Acids which are the result of the long fermentation ( 8 years ) improves insulin sensitivity
- Enhances muscle blood flow and glucose uptake in persons with impaired glucose tolerance and hypertriglyceridemia

Why is Papa Vince vinegar glaze so expensive?
Papa Vince Balsamic Glaze is made with the best ingredients. Have you read our nutritional panel? When you do, you will see that it is packed with vitamins and minerals.
When we brought our sample to the lab to create our nutritional panel, the lab was astonished with the results.
Let us explain:
You see, vitamins tend to degrade with time and unless there is a significant amount of them in food, they cannot be mentioned on the nutritional panel. The lab told us that most food companies fatten their products with "synthetic vitamins".
In our case, due to the authenticity and freshness of all our ingredients, we were able to preserve a significant amount of naturally-occurring vitamins which are 100% absorbable by the human body. Can you see how important this is to our body's health?

Which is the best way to consume Papa Vince Vinegar?
The best way is to consume with EVOO because you double the health benefits of both extra virgin olive oil and vinegar.
Most of the vitamins and minerals are fat solubles. So adding EVOO to your salad increases the ability of your body to absorb nutrients.

Why is Papa Vince Vinegar more liquid than others?
We do not reduce our balsamic vinegar. This is the consistency our family loves for salads and we just share what we love.
Is it thick and syrupy, or runny like grocery store balsamic vinegars?
Our balsamic vinegar is designed for salads.
We cooked our freshly harvested grapes to make fresh must and then mix with our fresh wine. The percentage of wine determines the thickness of the final product. We mix about 20% grape-must to 80% fresh wine. Then we add our 41-year old starter and age for 8 years in wood.
Please note that our vinegar is not made from concentrate therefore it will not taste sugary. Instead, it is made with fresh must, fresh wine aged 8 years in wood. Once you put a drop in your mouth, the difference will become very evident.
