We visited Sicily many years ago in December and got to see the planting of the wheat fields. The wheat produced in Sicily, for what I heard, was a special wheat specifically for pasta.The nutrients were not stripped away like our white AP flour. And they wheat variety was extremely digestible even to gluten intolerant. I have tried many "Italian " pasta varieties and all were, for the most part, excellent. The Papa Vince pasta (both kinds) was even better. I highly recommend this pasta.
