The Knight of De Stefani assigned Papa Vince an ambitious mission—to travel throughout the island of Sicily to locate the most durable olive oil.
After trying every olive tree on the island, he eventually discovered that Nocellara Del Belice was not only long-lasting but had a notably less bitter flavor than other varieties.
Recent research has demonstrated that Hydroxytyrosol is found in particularly high concentrations within Nocellara Del Belice trees grown at higher altitudes. In addition, certain studies suggest that the olives of this variety contain high levels of polyphenols - a fact proving Papa Vince right!
