The Secret Behind That Peppery Kick
That pleasant tickle in the throat? It comes from oleocanthal — a natural compound responsible for the peppery sensation that signals genuine, fresh EVOO.
But Papa Vince's story goes deeper. Each harvest, we send our oil to an independent lab — not once, but twice — to measure compounds like hydroxytyrosol, tyrosol, oleocanthal, and oleacein. Hydroxytyrosol is particularly well-studied in scientific literature for its antioxidant properties, and the European Food Safety Authority (EFSA) has referenced it in official research on olive-oil polyphenols.
Our latest independent lab test (performed eight months after harvest) showed:
10.29 mg of hydroxytyrosol, tyrosol, and derivatives per 20 g of olive oil.
