Whole wheat pasta with aubergines and artichokes.


INGREDIENTS

  • 400 g of wholemeal pasta spirals
  • 1 unit of Eggplant
  • 4 artichokes
  • 1 purple onion
  • Papa Vince Extra Olive oil
  • Papa Vince Sea Salt
  • Pepper
  • Chives

PREPARATION


1. Cook the pasta in boiling salted water for the time indicated for 10 minutes.


2. Clean the artichokes well and cut them into slices.


3. Peel the red onion and cut into julienne strips.


4. Wash, dry, remove the stalk and dice the eggplant.


5. Fry the onion, artichoke and eggplant in a frying pan with a lPapa Vince Olive oil. Season with salt and pepper.


6. Add the drained pasta, mix well, add chopped chives and it is ready to serve and eat!

Whole wheat pasta brings us many healthy benefits because it has fewer calories and is more digestive, among other things. That is why it is preferable -especially if you eat it for dinner- to conventional pasta. We prepare some screws with eggplant, artichokes and red onion, a recipe suitable for vegans and vegetarians.
