A Classic Italian Comfort Food with a Papa Vince Twist
If you grew up in an Italian household, there’s a good chance pastina brings back warm memories. It’s the kind of meal that feels like a hug in a bowl—simple, nourishing, and full of love.
This version keeps the comfort but adds a deeper, richer flavor thanks to a traditional Italian soffritto (a sauté of onion and celery), gently simmered with tomato sauce and broth. The result? A silky, savory base that coats each bite of Papa Vince's whole wheat pastina—made from organic, non-enriched khorasan ancient grain grown in Sicily. 🌾🇮🇹

- Tomato sauce adds richness and warmth
- Papa Vince ancient grain khorasan orzo pastina holds its shape beautifully thanks to its high-protein, heirloom grain
- Ready in under 20 minutes
- Cozy enough for winter, light enough for spring and summer
- 🧑🍳 Serves: 2–3 people
Ingredients
- 1 cup Papa Vince Whole Wheat Khorasan Orzo Pastina
- 2 tablespoons Papa Vince Extra Virgin Olive Oil
- ½ medium onion, finely chopped
- 1 celery stalk, finely chopped
- 1 garlic clove, minced (optional)
- 1 cup Papa Vince Low Sodium Tomato Sauce
- 3–4 cups vegetable or chicken broth
- Salt and black pepper, to taste
- Fresh basil or parsley, to garnish
- Grated Pecorino or Parmesan (optional)
Instructions
1. Sauté your soffritto
In a medium pot, heat Papa Vince olive oil over medium heat.
Add the finely chopped onion and celery. Sauté for 5–7 minutes until softened and fragrant.
Add garlic, if using, and stir for 30 seconds.
2. Build the broth
Add the tomato sauce and stir to coat the soffritto.
Pour in the broth, season with salt and pepper, and bring to a gentle simmer.
3. Cook the pastina
Add the Papa Vince pastina directly into the simmering broth.
Cook for 6–8 minutes, stirring occasionally to prevent sticking, until the pastina is al dente.
4. Serve with love
Ladle into bowls, top with fresh basil or parsley, and a spoonful of grated cheese if you like.
Enjoy it warm, with a drizzle of Papa Vince EVOO for extra depth.
