Baked fish parcels with vegetables, garlic and Extra Virgin Olive Oil

We always used to eat fish on Fridays when I was growing up and this was one of our favorite recipes.  We used red snapper but you can use your favorite fish and follow the recipe in the same way.  The most important ingredient is the Extra Virgin Olive Oil!  This is a tasty recipe that you can eat as part of the Mediterranean diet.

    How to make

    1. Pre heat the oven to 350 degrees.
    2. Peel the potatoes and cut into slices. Use the Papa Vince Peeler.
    3. Slice the onions and the bell peppers.
    4. Grate the garlic into a paste.
    5. Chop the parsley.
    6. Mix the garlic, parsley, Papa Vince Sea Salt and pepper in a bowl with 1/2 cup of Papa Vince Lemon Olive Oil and 1/2 cup Papa Vince Extra Virgin Olive Oil.
    7. Put all the potatoes and bell peppers in a large bowl and add the contents of step 5.Mix all the ingredients together with your hands.
    8. Put one of the fish fillets (we used red snapper) on wax paper and add the other ingredients to it.Wrap the paper to make a parcel around the fish.
    9. Repeat step 8 with the other fillets and put all the parcels in a pan.
    10. Put the pan in the oven and bake for 40 minutes. Check that the potatoes are tender & if so, the dish is ready for you to enjoy.
