Ingredients

6 ripe tomatoes 🍅

1 whole garlic bulb

Papa Vince Sea salt, to taste

Spicy peppers (optional — for a Sicilian kick 🌶️)
Instructions
1. Prepare the Tomatoes
In a small pot, add the tomatoes and the whole garlic bulb. Cover with water and bring to a gentle boil. This step helps loosen the tomato skins.
Nonna’s Tip: Before boiling, make a small, horizontal cut across each tomato’s skin (don’t cut too deep — just through the peel!). This makes them so easy to peel later.
Boil for about 10–15 minutes, until the skins start to lift.
2. Peel the Tomatoes and Garlic
Once boiled, drain the water and let them cool slightly. Then peel the tomatoes and remove the skin from the garlic.
You’ll notice how soft and fragrant they’ve become — that’s the magic of gentle boiling.
3. Start the Sauce (No Stove!)
In a separate pan, without turning the stove on, drizzle a little Papa Vince Extra Virgin Olive Oil.
Add the boiled garlic and gently smash it with a fork to release its aroma.
Then add the peeled tomatoes and mash them as well, make sure to add all the tomato water to the pot as well!
Nonna says: “This sauce doesn’t need to cook anymore — it’s meant to taste like fresh tomatoes under the Sicilian sun.”
4. Cook the Pasta
In another pot, bring water to a boil and add sea salt to taste.
Once boiling, add Papa Vince Spaghetti and cook until al dente.
When the pasta reaches that perfect bite, pour in a glass of room temperature water — this keeps it from overcooking while you get ready to serve.
5. Combine and Serve
Drain the pasta, drizzle with Papa Vince EVOO, and top with your fresh tomato and garlic sauce.
Toss gently until every strand is coated in that golden oil and the sweet tomato flavor.
Nonna’s Finishing Touches
To make it taste even better, add:
-Fresh basil leaves
-A sprinkle of Pecorino cheese
-Toasted breadcrumbs for crunch
