Ingredients (Serves 4–5)
- Papa Vince Tagliatelle
- 2 medium zucchini, diced
- 2 Sicilian sausages (or mild Italian sausage), casings removed
- 2 onions
- Papa Vince Extra Virgin Olive Oil to taste
- ½ cup white wine
- Papa Vince Trapani Sea Salt to taste
- Black pepper to taste
- Grated Pecorino or Parmesan cheese, to finish
Instructions
Prepare the Sausage
Heat 2 tbsp of Papa Vince EVOO in a large pan, add the chopped onion and let them brown.
Crumble the sausage into the pan and cook until golden brown, breaking it apart with a wooden spoon.
Add the Zucchini
In a different pan, add the chopped onion and let them brown.
Stir in the chopped zucchini and cook.
Add water to the zucchini and let it cook until soft.
Deglaze with Wine
Pour the white wine into the sausage and let it simmer until reduced.
Blend the zucchini
Once the zucchini is tender, transfer a portion of it to a blender with a spoonful of the cooking evoo and blend until smooth and creamy.
Return the blended zucchini to the pan and mix with the rest of the zucchini.
Incorporate the sausage into the pan with the zucchini.
Cook the Pasta
In the meantime, bring a pot of salted water to a boil.
Cook Papa Vince tagliatelle until al dente. Reserve ½ cup pasta water before draining.
Bring it Together
Toss the pasta directly into the pan with zucchini and sausage.
Add a splash of pasta water if needed to coat every strand in sauce.
Drizzle with another spoonful of Papa Vince EVOO for that final Sicilian touch.
