INGREDIENTS
Cake
- 4 Eggs
- ¾ cup White Sugar
- ⅔ cup Papa Vince Extra Virgin Olive Oil
- 2 tbsp fresh Orange Zest
- 1 ½ cups All-purpose Flour
- 1 tbsp Baking Powder
- 1 pinch Papa Vince Trapani Sea Salt
- 1 tsp of Spice Mix
Spice Mix
- Star Anise
- Fennel Seeds
- Peppercorns
- Whole Cloves
- Cinnamon Sticks
Place all the spices in a spice or coffee grinder and grind until smooth.
HOW TO MAKE
(1) Preheat oven to 350 degrees F (175 degrees C) and lightly oil and flour a loaf pan.
(2) Beat eggs in a bowl until lightened in color.
(3) Add sugar, extra virgin olive oil, orange zest, and the five-spice powder. Beat until smooth.
(4) Fold flour, baking powder, and salt into the egg mixture until the batter is just mixed.
(5) Pour the batter into the prepared loaf pan. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 40 minutes.
TIP: Cool in the pan for 10 minutes, than remove cake from the pan and cool on a wire rack.
What to do with leftovers?
To make it even more tasty, take any leftovers and turn them into cubes to layer on top of whipped cream and oranges, or toast them lightly before spreading honey over.
