Einkorn is the world’s oldest wheat — and the simplest. It is a diploid grain with just 14 chromosomes and no D genome, which means it never developed the tough, D-genome gluten of modern flour (and lacks the celiac-linked 33-mer peptide that spelt and regular wheat carry). Compared with all-purpose, whole wheat, spelt, and Kamut, einkorn has weaker, more extensible gluten and more golden lutein. One important caveat up front: einkorn is still wheat — it contains gluten and is not gluten-free.

Einkorn vs. other flours at a glance

Einkorn flour vs. regular and all-purpose flour

This is the big one — the flour in most kitchens. Regular white and all-purpose flour is refined modern bread wheat: a hexaploid grain (42 chromosomes) bred over the last century for strong, elastic gluten and high yield. Two things set it apart from einkorn.

First, genetics. Modern wheat carries three genome sets (A, B and D). Einkorn has only the original A genome. That extra machinery is why modern wheat makes tough, high-rising dough — and why it carries gluten fragments einkorn doesn’t.

Second, refining. All-purpose and white flour have the bran and germ milled out and are commonly bleached and “enriched” with synthetic vitamins to replace some of what was removed. Whole-grain einkorn keeps the whole kernel. For more on that, see how it’s stone-milled.

Einkorn flour vs. whole wheat flour

Whole wheat flour is a step closer to einkorn: it keeps the whole grain — bran, germ and all. If you’ve switched from white to whole wheat for the fiber and nutrition, that’s a genuinely good move.

But whole wheat is still modern wheat. It’s the same hexaploid grain with the same D genome and the same strong, celiac-linked gluten — just unrefined. So whole wheat wins on being whole grain, while einkorn wins on the underlying grain itself: older, simpler, weaker gluten, and richer in the golden pigment lutein.

Einkorn also carries far more of the golden pigment lutein — independent measurements put it at roughly 3–7 times the level in modern bread wheat. That describes the grain’s pigments, not a health claim. These findings come from independent research and do not guarantee the same results with our product.

Einkorn flour vs. spelt

Spelt is the comparison people get most wrong. Because spelt is also an “ancient grain,” it’s often lumped in with einkorn — but genetically, spelt is much closer to modern bread wheat. Spelt is hexaploid (42 chromosomes) and carries the D genome, just like the wheat in your supermarket.

That matters for one specific reason. The D genome is the source of the 33-mer, an α-gliadin fragment that resists digestion and is a major trigger in celiac disease. When researchers measured it, they found the 33-mer in spelt and modern wheat at 91–603 µg/g — but below the detection limit in einkorn (Schalk et al., 2017). Einkorn also has far weaker gluten overall: its gliadin-to-glutenin ratio runs up to 12.1, versus about 3.3 for spelt.

The honest bottom line on spelt:
Spelt is a fine, nutritious grain with a lovely nutty flavor — and it bakes more like regular wheat, which some people prefer. But it is a hexaploid wheat that carries the D genome and the 33-mer; einkorn does not. Neither is gluten-free or safe for celiac disease. Einkorn flour vs. Kamut (Khorasan)

Kamut is the brand name for a variety of Khorasan wheat (Triticum turanicum), another ancient grain — and this is the one that’s genetically closest to einkorn in one key way. Kamut is tetraploid (28 chromosomes, the A and B genomes) and, like einkorn, lacks the D genome. So it doesn’t carry the classic D-genome 33-mer either. (Its gluten hasn’t been profiled the same way einkorn’s has, so we won’t put a number on it — but note Kamut still contains gluten and is not celiac-safe.)

Where Kamut stands out is size and richness: its kernels are two to three times the size of modern wheat, it’s notably high in selenium, runs 12–18% protein, and has a distinctive buttery, sweet flavor. Einkorn is smaller and older, with weaker gluten and more lutein. Both are ancient wheats worth knowing; they simply shine differently — einkorn for its gentle, simple gluten, Kamut for its rich flavor and big, mineral-dense kernels.

Emmer, farro, and almond flour

A few more you’ll see compared to einkorn:

Emmer (farro) is another ancient wheat — a tetraploid like Kamut, with a hearty, chewy, nutty character. Like einkorn and Kamut it lacks the D genome, and like all of these it still contains gluten.

Almond flour isn’t a grain at all — it’s ground almonds, and it is naturally gluten-free. That makes it a genuine option for people avoiding gluten entirely, which einkorn is not. But it behaves completely differently in baking (no gluten to build structure), so it’s not a one-to-one swap. Does einkorn bake and taste different?

Yes, noticeably — and it comes straight from that weak gluten. Einkorn’s gliadin-heavy protein makes a soft, extensible dough that doesn’t trap gas the way strong modern-wheat dough does, so it behaves differently on the bench.

If you’re swapping einkorn into a recipe, three quick adjustments cover most of it: it mills to about 1.5× the flour by volume, it drinks up roughly a third less liquid, and it needs no more than about four minutes of kneading.

On flavor, einkorn is golden, nutty and lightly buttery — richer than plain white flour. Whole wheat is heartier and more bitter; spelt is nutty and mild; Kamut is buttery and sweet. If you want the flour that tastes the least “plain,” einkorn and Kamut lead.
