What “stone-ground” actually means
“Stone-ground” (or “stone-milled”) describes how a grain is turned into flour, not what grain it is. In stone milling, the whole kernel is fed between two stones and gently crushed as they turn. It is one of the oldest food technologies we have — and for einkorn, one of the oldest grains we have, it is a fitting match.
Three words do most of the work in a genuine stone-milled flour, and they are the three we can honestly say about ours: whole-grain, single-pass, and cold.
The three things that define a real stone-milled flour

The entire kernel goes in and comes out as flour — bran, germ and endosperm together. Nothing is separated off and thrown away.
The grain is milled once, in one gentle pass through the stones, rather than sheared apart over many high-speed passes.
Slow-turning stones run cool, so the flour never heats up the way it does in a fast industrial mill.

None of this is a health claim. It is simply a description of a process: a whole grain, crushed once, kept cool. What that process protects — and what the faster, hotter alternative costs — is the interesting part.
Stone milling vs. roller milling
Almost all of the flour on a supermarket shelf is roller-milled. It is a genuinely impressive industrial process, engineered for speed, volume and a long, stable shelf life — and those priorities come with trade-offs for the grain itself.
In roller milling, the grain is shredded between fluted steel rollers turning at high speed — up to about 775 RPM. That speed does two things. First, the friction generates real heat, enough to denature some of the grain’s proteins and to oxidize the delicate oils in the germ. Second, the process is designed to strip the nutrient-dense bran and the oil-rich germ away from the starchy center, because removing them is exactly what gives white flour its long shelf life. What is left is mostly refined starch, which is then commonly bleached and “enriched” with synthetic vitamins to add back a little of what milling removed.

What stays in the flour
A grain of einkorn is not one thing — it is three, and each has a job. Milling either keeps them together or drives them apart.

The fiber-rich coat of the grain. Whole-grain flour keeps it; refining removes it.
The tiny embryo of the seed, rich in natural oils, vitamin E and minerals. It is also the first thing to spoil, which is why industrial milling removes it.
The large starchy body of the kernel. This is essentially all that white flour keeps.
Because a single cold pass keeps the whole kernel together, a stone-milled flour holds on to the parts a refined white flour leaves behind: the fiber of the bran, and the oils, vitamin E and minerals concentrated in the germ. Keeping the temperature low also matters for what is inside those parts. High processing heat can degrade heat-sensitive compounds; a low-temperature grind is gentler on them, and keeps the germ’s oils from oxidizing.
Einkorn is a good candidate for that gentleness, because its whole-grain matrix is unusually rich to begin with. Independent research has measured einkorn as carrying notably more carotenoids — the golden pigments lutein and zeaxanthin — than modern wheat, along with other antioxidants that a low-temperature grind is designed to preserve. That describes the compounds in the grain and how milling handles them; it is not a claim about what the flour will do for your health. The same thing that makes a stone-milled whole-grain flour special — keeping the oil-rich germ in the flour — is also what gives it a shorter shelf life than industrial white flour. Those natural germ oils are alive and, like any good oil, they will eventually go stale. Refined white flour lasts for years precisely because the germ has been removed.
So treat a real stone-milled flour a little more like a fresh food than a shelf-stable pantry staple. That is not a downside to hide; it is the direct evidence that the whole grain is still in the bag.
