Every year we send our extra virgin olive oil to an independent laboratory and publish exactly what comes back. Here is the 2026 result: 7.97 mg of hydroxytyrosol, tyrosol and their derivatives per 20 g, HPLC-verified by the World Olive Center for Health — and measured six months after the harvest, not on the day the oil was pressed. That second fact is the one almost no brand will show you, and it is the whole point of this page.

Why we test the same oil twice
Almost every high-polyphenol olive oil in the world is tested once — at harvest, when the oil is freshly pressed and its polyphenols are at their absolute peak. That number goes on the label, and then the oil is bottled, shipped, warehoused and shelved for months before anyone pours it.
Polyphenols do not sit still during those months. They are consumed — that is literally their job, which we’ll get to. So a harvest-day number tells you what the oil was, not what it is when it reaches your kitchen.
That is why we test the same oil twice: once near the press, and again months later. The number on this page — 7.97 mg per 20 g — is the second reading, taken 15 March 2026, roughly six months after an October harvest. It is deliberately the less flattering of the two numbers, because it is the honest one.
We went looking for another brand that publishes a post-storage re-test. We compared nine of them in our 2026 review of the real best high-polyphenol olive oils, and could not find one. If you know of one, tell us and we will add it.
What the 2026 lab test shows

The oil is Nocellara del Belice, grown on our family’s estate in Santa Ninfa, Sicily, and harvested in October.

What does 7.97 mg per 20 g actually mean for you?
In 2012 the European Food Safety Authority authorised exactly one health claim for olive oil polyphenols: that they contribute to the protection of blood lipids from oxidative stress. The claim may be used only for oil containing at least 5 mg of hydroxytyrosol and its derivatives per 20 g — the regulation names tyrosol and the oleuropein complex as examples — and the effect is associated with a daily intake of 20 g of olive oil.
Our 7.97 mg is that basket, measured the way EFSA’s claim is assessed, and it is comfortably above the 5 mg line — six months after the press, when many oils have already fallen below it.
Read what the regulation does not say, too. It does not say heart health. It does not mention cholesterol, blood pressure or inflammation. Those broader claims were considered and were not authorised. When a brand tells you its oil is EFSA-approved for “heart health”, it is describing a regulation that does not exist. The real claim is narrow, specific, and about one thing — which is exactly why it gives you a number you can check.

Why crossing the line is enough — and the rest is marketing
EFSA’s threshold — 5 mg of hydroxytyrosol and its derivatives per 20 g — is the same thing as a concentration of 250 mg/kg. Here is the part the industry would rather you didn’t dwell on: once an oil is past that line, the regulation describes no added benefit for more. The race to 1,000, 1,500, 2,000+ is a race past the only mark that was ever defined.
You already know this logic — you just apply it everywhere except the supplement aisle. If the box says take one tablet, you take one. Swallowing five doesn’t make it work five times better — it’s the same dose doing the same job, with the extra simply along for the ride. The label says one because one is the amount that was tested and found to work.
Olive oil polyphenols work the same way. EFSA looked at the evidence and identified an amount — 5 mg per 20 g — associated with protecting blood lipids from oxidative stress. It did not authorise a “more is better” claim, because the evidence for one wasn’t there. Past the line, a bigger number on the label buys you more bitterness and a higher price, not a bigger effect the regulation recognises.
That is why we don’t chase the highest number in the aisle. Ours clears the line EFSA actually drew, comfortably, six months after the press — and it does it in an oil you’ll still want to eat. Which is the point: the effective dose in a bottle you finish beats a record-breaking number in a bottle you don’t.

Why the date on a lab test matters more than the number
This is the part the whole page is built around, so here it is plainly: a polyphenol number without a date attached is a photograph, not a promise.
Researchers who followed four olive oils for eighteen months found the phenols fall on a predictable curve — the same mathematical shape as radioactive decay — and that how fast depends on the variety, the starting amount and, above all, the temperature. Oil kept at 25 °C lost its phenols dramatically faster than the same oil kept cool (Krichene, Salvador & Fregapane, 2015).
And those same researchers wrote the sentence this page exists to make: storage conditions affect an oil’s phenolic content and therefore the expiration date of the health claim that olive oil polyphenols protect blood lipids. The health claim itself has an expiry date, and it is printed on no bottle. An oil can clear 5 mg per 20 g on pressing day and quietly stop clearing it long before you reach the bottom.
That is why our 7.97 mg is measured at six months and not at the press. It is the number that describes the oil you would actually pour.

Why “total polyphenol” counts can be misleading
Walk the high-polyphenol aisle and it is an arms race of totals — 800 mg/kg, 1,200, 2,000+. Two things are wrong with reading those numbers straight.
First, the total is not the thing the science is about. EFSA’s claim is not written about total polyphenols; it is written about hydroxytyrosol and its derivatives specifically. Much of a big total is real chemistry, but it is not the compound the health claim rests on.
Second, the measuring method changes the number. HPLC physically separates the compounds and is the method EFSA’s claim is assessed on. NMR reads magnetic signatures, is faster, and tends to return higher totals for the same oil. Neither is fake — but a brand that quotes a big NMR total against EFSA’s HPLC-based 5 mg threshold is comparing two different rulers. Our 7.97 mg is HPLC. Ask any brand which method produced its number; if they won’t say, the number isn’t comparable to anything.
The other compounds on our certificate, and what they taste like
Hydroxytyrosol is the compound EFSA’s claim is built around, but it is not the only phenolic on our certificate — and the others are the ones you can actually taste. If you have ever felt fresh olive oil catch at the back of your throat, or noticed a clean bitter edge, you have already met them.
Oleocanthal — 138 mg/kg. This is the peppery sting. It is the compound behind that cough-inducing catch high-phenolic oils give you, and it is a reliable sensory marker of a fresh, phenol-rich oil. On our 2026 certificate it sits above the average value the World Olive Center notes for the international samples it benchmarks against. Independent researchers have been studying oleocanthal with interest; we’ll let that research speak for itself rather than make claims about it.
Oleacein — 105 mg/kg. Oleocanthal’s partner, and part of the bitter-green character of an early-harvest oil. Together the two make up what the lab reports as the D1 index (243 mg/kg) — a single figure some producers use as shorthand for an oil’s pungent, bitter backbone.
Here is the honest connection to flavour, because it is the reason we don’t chase the highest possible numbers. The compounds that make an oil measurably potent are the same ones that make it bitter and peppery. Push them to an extreme and you get an oil that’s hard to enjoy on food — and an oil you don’t reach for is an oil that sits in the cupboard doing nothing. Our numbers are deliberately in the range where the oil is potent and still a pleasure on bread. That balance is a choice, and it is the one we make every harvest.

How hydroxytyrosol actually protects the oil
Ninety seconds of chemistry explains why the date matters. Oil goes rancid through a chain reaction: oxygen, light and heat knock an electron loose from a fat molecule, that radical steals from its neighbour, and the reaction feeds itself. Hydroxytyrosol breaks the chain by handing over a hydrogen atom of its own — and it is used up doing so. It dies so the fat doesn’t.

What this means for the bottle in your kitchen
Our oil is unfiltered — decanted rather than filtered — which keeps more of the water-soluble phenols that filtering strips out. It also means, honestly, that the oil starts richer and more exposed: more phenol to protect, and more of what it takes to degrade it.
Which is exactly why we test at six months instead of arguing about it. Free acidity is the fingerprint of an unfiltered oil going wrong — water and enzymes break the fats apart and acidity climbs. Ours reads 0.16 against an extra-virgin limit of 0.8, on a certificate dated six months after the press. Peroxides 5.60 against a limit of 20. The oil didn’t do the thing an unfiltered oil is supposed to do, and we can prove it, because we measured.
That is the whole point of publishing this. Not the biggest number in the aisle — several oils beat ours on harvest day, and we say so in the comparison. What we publish is the number after the oil has lived a real bottle’s life, and the certificate to back it.

Why does the measurement date matter so much?
Because olive oil polyphenols decay from the moment the oil is pressed. A harvest-day number tells you the oil’s peak, not what remains when you open the bottle. Testing months later is the only way to describe the oil you actually pour. Most brands publish only the harvest-day figure.
Why does high-polyphenol olive oil make me cough?
That peppery catch at the back of the throat is associated with oleocanthal, one of the phenolic compounds in fresh oil — a sign the oil is fresh and phenol-rich. It is a sensory signal, not a dosage gauge.
How should I store it so the polyphenols last?
Away from light, heat and air — the three things that start the chain reaction. Keep it in a cupboard rather than beside the stove, below about 72 °F, cap tight, and use the harvest date rather than a “best by” date to judge freshness.
HPLC or NMR — which number should I trust?
HPLC. It physically separates the compounds and is the method EFSA’s claim is assessed on; NMR is faster but tends to report higher totals. Our 7.97 mg is HPLC. If a brand won’t say which method produced its number, the number isn’t comparable.
