Not at all silly! I have to severely limit acidity in the food I eat. The tomato sauce is delicious; I add a pinch of baking soda to bring it to pH7 neutrality, and you cannot tell the difference. I also add a pinch of asafoetida (also called hing) which adds the flavor of garlic and onions without some of the difficulties that some folks have with those 2 allium bulbs. I assure you that the good ingredients are not marred by those 2 tiny additions, and I can enjoy a spicy meal of gnocchi alla marinara without tummy issues.
I have been using Papa Vince for many years. Love that it is single source from a small family farm. My favorite way to use it is to make salad dressing. I never buy store-bought salad dressings anymore. This olive oil makes the absolute best salad dressing you will ever taste. This family is passionate about their products. So good and a time saver when I’m too rushed to make my own. I made the mistake of refrigerating it, but this isn’t a grocery store salad dressing full of soybean oil and high fructose corn syrup. Just a handful of pure ingredients perfectly blended and balanced. I also use their olive oil and trust that it is not rancid - like so many others on the market.

I cannot say enough how your olive oil is helping my RA! I take it everyday and it keeps my bones from snap, crackle and popping!! It’s like WD-40 for bones! Wish I knew this years ago, better late than never!

The Papa Vince olive oil itself is good enough to eat with a spoon! The Chili oil is just as good, plus has a just a little bite of chili peppers. I’ve used a little dash in scrambled eggs, and a tablespoon or so with a fish filet. The oil adds a little spiciness and heat without overpowering the flavor. I think it’s great 😊
My husband and I are enjoying our Papa Vince’s extra virgin olive oil so much. We use it most every day in some way, from on our salads to over pasta dishes, or roasted veggies. So healthy tasting and so tasty compared to other olive oils.

How we got our start?
Our story starts with Papa Vince, the cute old man on the label. He learned the art of making Extra Virgin Olive Oil (EVOO) when working as an apprentice for the Knight of De Stefani at the Medieval Castello of Rampinzeri, Santa Ninfa, Italy.
